Along with scents of fresh apples, and produce from the Beaver
Valley, there is a hint of Europe in the air at the Falls
Inn. Seasoned in Italy, newly-hired Canadian Chef Peter Sanagan
is busy testing his new autumn menus that will be introduced
September 19 at the Inn. Sanagan brings a French-Italian flavour
and combines many of the areas local ingredients. Sanagan
who apprenticed at Hotel Colonne in Italy under Michelin starred
Chef Natale Bacchetta, is adding a new exciting level of cuisine
for the Bruce Trail and Niagara Escarpment. The Falls Inn
is located between Collingwood and Meaford in the Georgian
Bay region north of Toronto. Overnight dining packages range
from $85. to $125 per person based on double occupancy. Tax
and service charge extra some restrictions apply.
Sanagan was born in the Lake Huron-Georgian
Bay region, and graduated from one of Canada’s leading
culinary schools, George Brown College. After leaving George
Brown he worked for Toronto’s Le Select Bistro, then
with Chef Massimo at Mistura. After two years Sanagan moved
up to Sous Chef. Following his two years in Italy, Sanagan
returned to Toronto at Auberge du Pommier with the Oliver
Bonacini Group before returning to Mistura as Chef du Cuisine.
Meg and Dwayne Hallman, owners and operating
innkeepers at the Falls Inn, are thrilled with their new chef
and his newly-created menus. The Hallmans are passionate about
hospitality and the move toward fresh local ingredients with
a style of cuisine that features an Italian-French flare.
Chef Sanagan’s first menu has many items inspired by
country French cuisine, the grassroots of fine dining. Some
Italian dishes have also been included given Sanagan’s
extensive Italian training. Local Stuffed Rabbit with Braised
Carrots and Pan Fried Perch with Grapes, Bacon Braised Brussel
Sprouts feature the rustic country fare available on the new
menu.
After three years of construction the Inn opened
in 2005 and recently became a member of Ontario’s Finest
Inns and Spas when its level of services and amenities exceeded
the quality standards for membership.
The Inn was constructed on the site of the historic
sawmill purchased from the Olmstead brothers by Willard Hallman
in the mid 40's. The sawmill burnt in 1984 and was relocated
to a larger lot on the edge of town. The Inn was built by
Dwayne Hallman, his father and his brother-in-law. Materials
from the family sawmill were used in the construction. Meg
has hospitality in her blood as she grew up in a small Inn
in St. Andrews, New Brunswick where her mother was resident
manager.
The Inn has 15 falls-view rooms with private
balconies and dining for 70 guests. A Bruce Trail loop allows
guests to hike directly from the inn. A ‘petit spa’
operates on-site. The inn is a 15 minute drive to Beaver Valley
and Blue Mountain skiing. The Niagara Escarpment Commission
is considering a development permit to begin generating hydro
on the falls for the Inn using the infrastructure that remains
from the sawmill.
